Spaghetti Squash with Meat Ragu (Paleo recipe)

Found a fantastic PALEO spaghetti squash recipe on one of my favorite recipe websites, including the sauce :) Hope you guys enjoy!



Ingredients:
  • 8 cups cooked spaghetti squash (from 2 medium, about 6 lbs total)
  • salt and fresh pepper, to taste

For the Meat sauce:

  • 1 tsp butter
  • 1 tsp olive oil 
  • (4 oz) 1/2 onion, finely chopped 
  • 1 carrot, peeled and chopped  
  • 1 celery stalk, finely chopped 
  • 1 lb 95% lean beef  
  • 28 oz can of crushed tomatoes (I prefer Tuttorosso)  
  • 1/4 cup white wine (yes, you can leave this out if you dont drink wine) 
  • 1 bay leaf 
  • salt and fresh pepper, to taste


Directions:


Preheat oven to 400ºF. Cut spaghetti squash in half lengthwise and scoop out seeds and membrane. Season with salt and bake about 1 hour, or longer if needed on a baking sheet, cut side up.


If you prefer the microwave, cut squash in half lengthwise, scoop out seeds and fibers and place on a microwave safe dish and cover. Microwave 8-9 minutes or until soft.


In a large deep sauté pan, melt butter and add oil. Add onions, celery and carrots and sauté on medium-low for about 3 to 4 minutes, until soft. Add the beef and season with salt. Brown the meat and cook, breaking it into smaller pieces with your spoon until cooked trhough. When cooked, add the tomatoes and adjust salt and pepper to taste. Add wine and simmer until it reduces a bit, then add bay leaf and cover, reducing heat to low. Simmer at least an hour, stirring occasionally.


When spaghetti squash is cooked, let it cool for about 10 minutes. When cool, use a fork to remove flesh, which will come out in spaghetti looking strands. Keep covered and set aside keeping warm until sauce is ready. Serve topped with meat sauce and grated parmesan cheese, if desired.

Clean Eating French Toast

Serves 2

Calories- 166 per serving
Fat- 2g per serving

Ingredients:

  • 3 egg whites
  • 1/4 cup skim milk
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon pure vanilla extract
  • 2 slices whole-grain bread
  • Cooking spray
  • 1/2 cup berries
  • 1 tablespoon honey (optional)
  • 1 tablespoon powdered sugar (optional)
  • 2 tablespoons chia seeds (optional)

Directions:

1. In a medium mixing bowl, blend egg whites, milk, cinnamon, nutmeg, and vanilla extract. Place bread in batter one slice at a time and let soak for 1 minute per side.
2. Spray a nonstick skillet with cooking spray and heat over medium heat. Add bread and let cook about 3 minutes on each side until golden brown. Remove to a plate and top with berries, honey, sugar, and chia seeds, if desired.

Simple Raw Strawberry Cheesecake Icecream

Yield: 1 Serving
Ingredients:
  • 1 1/2 Cups Sliced Frozen Strawberries
  • 1/2 Fresh Squeezed Lemon
  • 5 Drops Liquid Stevia (or to taste)
  • Dash of Vanilla Extract
  • 1 1/2 Tbsp Raw Cashew Butter
Directions:
  1. Place all ingredients into your food processor.
  2. Start by pulsing ingredients.
  3. Then blend until completely smooth ice cream texture.
  4. Place into a bowl and enjoy!

Shakeology brownies

Shakeology Brownie Recipe

Total Time: 3 hrs., 10 min.
Prep Time: 10 min.
Cook Time: None
Yield: 10 bars

Ingredients:
2 scoops Chocolate Shakeology
1 cup egg white powder
2 cups old-fashioned rolled oats
2 Tbsp. wheat germ
2 Tbsp. flax seed
1 tsp. ground cinnamon
½ cup unsweetened almond milk
¼ cup raw honey
¼ cup all-natural almond butter
2 ripe medium bananas, mashed
Nonstick cooking spray

Preparation:
1. Combine Shakeology, egg white powder, oats, wheat germ, flax seed, and cinnamon in a large bowl; mix well.
2. Add almond milk, honey, almond butter, and bananas; mix well with a spatula or clean hands.
1. Place in an 8 x 8-inch pan that is lightly coated with spray. Cover with plastic wrap and press down to flatten into pan. Refrigerate for 3 hours.
3. Cut into 12 bars.

Chocolate Peanut Butter Oatmeal Balls --Clean Eating Recipe--

Ingredients
  • 1 cup old-fashioned oats {could certainly use gluten-free if needed}
  • 1/4 cup cocoa {naturally unsweetened}
  • 1/4 cup shredded coconut {unsweetened}
  • 1/2 cup natural peanut butter {look for a jar with peanuts (and maybe salt) as the ONLY ingredient/s}
  • 1/4 cup raw honey
Instructions
Stir all dry ingredients together to mix well. Add the wet ingredients and blend well. *Sometimes it's best to use your hands to ensure the ingredients get fully incorporated.

Use a small cookie scoop to get even sized balls. Roll each ball by hand. Chill in fridge until ready to serve.
